Old Tom gin is a little different than the London dry style you might be used to. It's generally softer and slightly sweeter, which works well with the tart lemon and berry flavors in this drink.

Not familiar with marionberries? They're a type of blackberry developed right here in Oregon, with a rich, sweet-tart flavor.
The blackberry notes in Marionberry Lavender Bitters compliment the fresh lemon, and lavender plays beautifully with the botanicals in gin. Together, they give this sparking cocktail its distinctive flavor with just a few dashes.
Lavender Haze
Makes: 1 drink
2 oz Old Tom gin
3/4 oz lemon juice
1/2 oz simply syrup*
2 droppers Marionberry Lavender Bitters
sparkling water
lemon peel, to garnish
Combine gin, lemon juice, and simple syrup and shake with ice. Strain into an ice filled collins glass. Add Marionberry Lavender Bitters and top with sparkling water. Garnish with a lemon peel.
*SIMPLE SYRUP
Heat 2 T sugar and 2T water in a pan until sugar is dissolved. Cool before using. Store in the refrigerator.

There's plenty of room to play with this one.
Try a floral gin to bring out the lavender, or use a London dry gin for a more juniper-forward flavor. Lemon sparkling water adds another little pop of citrus, while an extra dash or two of Marionberry Lavender Bitters brings out more of those berry and floral notes.
