Final Countdown Spritz | A Chamomile Vanilla Bitters Cocktail for New Year's

A bright, bubbly spritz to celebrate the moment, with Chamomile Vanilla Bitters

There’s something about this time of year that naturally invites a pause. Not the loud, confetti-filled kind, but the softer kind—where you look back, take a breath, and let yourself enjoy this moment.

The Final Countdown Spritz was made for that feeling. It’s bright and citrusy, lightly floral, and finished with bubbles that feel celebratory without demanding a reason. Vodka keeps things crisp, meyer lemon brings a fresh spark, and dry vermouth & triple sec add just enough depth to keep things balanced. A few dashes of Chamomile Vanilla Bitters round it all out, making the drink feel thoughtful and complete.

This is a spritz for closing chapters gently. For opening something bubbly because it feels right. For savoring the moment you’re in, whether gathered with friends, curled up at home, or somewhere in between.

I created this cocktail as a reminder that celebration doesn’t have to be big to be meaningful. Sometimes it looks like a tasty drink and a quiet sense of gratitude for the year behind you.

Final Countdown Spritz

A citrus-forward spritz for celebrating the moment

1 ½ oz vodka

1 ½ oz meyer lemon juice

½ oz dry vermouth

½ oz triple sec

Prosecco

20 drops Chamomile Vanilla Bitters

Shake vodka, meyer lemon, vermouth, & triple sec with ice. Divide between two Champagne flutes. Add Prosecco to fill and top with 10 drops bitters.

As one season turns into the next, let this spritz be an invitation to mark the moment in your own way. Because sometimes the best celebrations are the ones you decide to have—simple, intentional, and worth savoring.
